Whether you have an Instant Pot or not, you’ll still want to know about Pho Horn’s, the casual Vietnamese eatery that’s tucked away in a strip mall not far from the Providence/Pawtucket line.

I had my first steaming hot bowl of pho, the classic Vietnamese soup, a few winters ago. They make mine vegetarian, with a vegetable broth and tofu instead of the more traditional beef broth and meat or fish add-ins, and it was most definitely something to boast about online.

The rice noodles are dangerously good and do not soak up all the broth, as other ones are wont to do. The serving size is also substantial and filling enough to be a fantastic stand alone meal. I mean, is there anything better on a winter day than dipping into a pipping hot order of soup?

Also, the only reason I found out about this place really is because someone in my circle was there for lunch at some point and raved about the bowl of pho she’d had. She also said it is always busy (aka, it has a loyal and devoted following).

The exterior, however, is about as nondescript as it gets, so you might be tempted to pass it by. That, however, would be a mistake of epic proportions.

Go and warm up with a big bowl of their phenomenal pho.
