The other night I motored over to the Motif Magazine Food Truck Food & Drink Awards in Lincoln (Eric from PVD Food Truck Events had asked me to be a presenter and the folks from Motif were beyond nice) and I got to meet Lyslie from the wildly popular plant-based food truck Basil And Bunny.

Turns out we both worked at Nordstrom Providence Place around the same time and that’s soooo Rhode Island, amirite?

She and her husband have since gone on to launch an incredible biz that’s all about thoughtfully-made-from-plants versions of all our favorite comfort foods.

The other night Bunny And Basil won something for their MMM Bop Tarts (see photo below, people simply cannot get enough of their 2021 spin on every Boomer’s and Gen Xer’s favorite breakfast and snack food), but wait, because there’s so much more!

In addition to those, regular customers (including my good friend and another Nordstrom PVD alum KG) rave about their hand cut fries (made from fresh-never-frozen potatoes), meat-free burgers, and their signature "chicky” sandwiches (from house-made seitan no less).

Yes, every single item on their menu is cooked up from scratch using the best quality ingredients they can get their hands on.

No short cuts or corner cutting for these folks!

Also, as we get closer to the holiday season (it’ll be here before we know it), they will be rolling out their colorful and carefully prepared vegan charcuterie boards.

Their boards are my dream appetizer for Thanksgiving and Christmas because I don’t eat meat, but I definitely do enjoy digging into a nice mix of crackers, fruits, nuts and such.
